Spinach Gratin
- 2 lbs spinach, cooked and drained
- 1 cup cooked brown rice
- 1 cup grated cheddar cheese
- 2 tablespoons chopped parsley
- 12 teaspoon salt
- 18 teaspoon pepper
- 1 tablespoon melted butter
- 3 tablespoons catsup
- 1 tablespoon prepared horseradish
- 3 tablespoons wheat germ
- 1 tablespoon melted butter
- nonstick cooking spray
- 2 (6 ounce) cans tomato paste
- 2 tablespoons wine
- 1 clove garlic, crushed
- 2 teaspoons brown sugar
- salt and pepper
- 12 teaspoon basil
- 12 teaspoon oregano
- Combine spinach through horseradish.
- Put in a casserole coated with cooking spray.
- Combine wheat germ and butter and sprinkle over top.
- Bake at 325 for 20 minute.
- Mix tomato paste through oregano, warm in a saucepan and serve with spinach.
