Easy Moussaka

  1. Spray eggplant slices with oil and cook under a hot grill or on a char-grill pan until golden brown.
  2. Keep warm.
  3. Spray a frypan with oil and cook onion and garlic together, until translucent.
  4. Add mince and brown well.
  5. Stir through pasta sauce and herbs, heat through.
  6. To assemble: place one slice of eggplant in the centre of each plate.
  7. Top each eggplant slice with half of the meat mixture and cheese sauce.
  8. Repeat with another layer and finish with an eggplant slice.
  9. Serve.
