Easy Moussaka
- 12 x 1cm eggplant slices (about 2 medium sized eggplants) Safeway 1 ea For $1.28 thru 02/09
- non-stick cooking spray
- 1 onion, finely chopped Safeway 3 lb For $2.99 thru 02/09
- 1 garlic clove, crushed
- 500g lean lamb or beef mince
- 1 1/2 cups gluten free char-grilled vegetable pasta sauce
- 2 tablespoons chopped fresh parsley
- 1 1/2 teaspoons dried oregano
- 1/4 cup KRAFT Easy Cheese Cream Cheese Spread, warmed for 1-2 minutes in the microwave with
- 1/4 cup sour cream
- Spray eggplant slices with oil and cook under a hot grill or on a char-grill pan until golden brown.
- Keep warm.
- Spray a frypan with oil and cook onion and garlic together, until translucent.
- Add mince and brown well.
- Stir through pasta sauce and herbs, heat through.
- To assemble: place one slice of eggplant in the centre of each plate.
- Top each eggplant slice with half of the meat mixture and cheese sauce.
- Repeat with another layer and finish with an eggplant slice.
- Serve.
