Black Beans & Rice

  1. Cook rice according to packaging.
  2. Heat oil in saucepan over medium heat.
  3. Add onion, pepper* & garlic; cook until tender, about 8-10 minutes.
  4. Stir in remaining ingredients.
  5. Bring to a boil, reduce heat and simmer 10 minutes.
  6. Either mix with or serve over rice.
  7. *For a spicier dish, use part jalapeno.
