Mexican Bean Medley
- 1 cup black beans
- 1 cup pinto beans
- 1 yellow onion; medium dice
- 1 bunch scallions; sliced on bias
- 1 yellow bell pepper; medium dice
- 1 red bell pepper; medium dice
- 4 jalapenos; de-ribbed & small diced
- 2 clove garlic; minced
- 1 bunch cilantro; chiffonade
- 1 lime
- 1 tsp cumin
- 1 vegetable oil; as needed
- 1 pinch of salt and pepper
- Heat oil in a large saute pan.
- Sweat onions and peppers until nearly tender.
- Add garlic and beans.
- Season with dried spices.
- Toss.
- Sweat until fragrant.
- Add scallions, cilantro, and lime juice.
- Toss.
- Variations; Tequila, vinegar, parsley, shallots, corn, zucchini, salsa, queso fresco, poblano, diced green chiles, chives, vegetable stock, pigeon peas
