Cheesy Ham and Potato Omelet

  1. Cook potatoes, onions and garlic in 2 Tbsp.
  2. hot oil in large skillet on medium heat 10 to 12 min.
  3. or until potatoes are tender, stirring occasionally.
  4. Whisk eggs in large bowl.
  5. Add potato mixture, ham, 1/2 cup cheese and pepper; mix well.
  6. Heat remaining oil in same skillet on high heat.
  7. Add egg mixture.
  8. Reduce heat to low; cook 12 min.
  9. or until egg mixture is almost set.
  10. Slide omelet onto dinner plate.
  11. Place skillet upside-down over omelet; carefully turn plate and skillet over to flip omelet.
  12. Sprinkle with remaining cheese; cook 3 min.
  13. or until cheese is melted and center of omelet is set.
