German Potato Pizza
- 2 lb. shredded potatoes
- 1 md. onion , chopped
- 1/2 green bell pepper, diced
- 3 eggs
- 1/3 cup buttermilk
- 1 cup cheddar cheese
- 1 cup German-style saurkraut
- 1 cup cubed ham
- In a 12" well buttered skillet, add potatoes.
- Cook on low.
- Add green pepper and onions.
- Combine eggs and milk together.
- Whisk until blended well.
- Pour egg mixture over ingredients in the skillet.
- Cook covered until potatoes are tender (30 minutes).
- Top with ham, kraut and cheese.
- Serve as soon as cheese has melted.
