Beef, Pepper, And Shiitake Mushroom Stir Fry Recipe
- 1 tsp extra virgin olive oil divided cooking spray
- 6 ounce beef tenderloin cut into 1/2-inch strips
- 1/2 c. sliced shallots
- 1/2 c. green bell pepper cut into 1/4-inch strips
- 1/2 c. red bell pepper cut into 1/4-inch strips
- 1/2 c. yellow bell pepper cut into 1/4-inch strips
- 3 x garlic cloves chopped
- 2 c. sliced shiitake mushroom caps about 3.5 oz package
- 1/4 c. dry white wine
- 1/2 c. no-sat-added beef broth
- 1 Tbsp. minced fresh basil
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 1/2 c. warm cooked rice

- Heat 1/2 tsp.
- oil in a large nonstick skillet coated with cooking spray over medium-high heat till warm.
- Add in beef; stir-fry 2 min.
- Remove beef from skillet; set aside.
- Wipe skillet clean with a paper towel.

- Heat 1/2 tsp.
- oil in skillet.
- Add in sliced shallots, bell pepper strips, and chopped garlic, and stir-fry 1 minute.
- Add in mushrooms, and stir-fry 2 min.
- Stir in wine, and cook 1 minute.
- Add in broth; reduce heat, and simmer 3 min.
- Return beef to skillet, and cook 1 minute.
- Stir in minced basil, salt, and pepper.
- Serve with rice.
- Yield: 2 servings (serving size: 1 c. beef mix and 3/4 c. rice).
