Beef, Pepper, And Shiitake Mushroom Stir Fry Recipe

  2. Heat 1/2 tsp.
  3. oil in a large nonstick skillet coated with cooking spray over medium-high heat till warm.
  4. Add in beef; stir-fry 2 min.
  5. Remove beef from skillet; set aside.
  6. Wipe skillet clean with a paper towel.

  9. oil in skillet.
  10. Add in sliced shallots, bell pepper strips, and chopped garlic, and stir-fry 1 minute.
  11. Add in mushrooms, and stir-fry 2 min.
  12. Stir in wine, and cook 1 minute.
  13. Add in broth; reduce heat, and simmer 3 min.
  14. Return beef to skillet, and cook 1 minute.
  15. Stir in minced basil, salt, and pepper.
  16. Serve with rice.
  17. Yield: 2 servings (serving size: 1 c. beef mix and 3/4 c. rice).
