Vegetarian Bolognese Frittata Bites
- 1 (14 1/2 ounce) can Italian-style diced tomatoes, well drained
- 1 green onion, minced
- 1 large garlic clove, crushed
- 12 cup canned small white beans, rinsed and drained
- 6 eggs, separated
- 13 cup grated parmesan cheese
- 13 cup shredded mozzarella cheese
- 12 cup shredded spinach
- 12 teaspoon lemon zest
- 12 teaspoon lemon pepper
- basil sprig (to garnish)
- In a large bowl combine the tomatoes, green onion, garlic, and white beans plus the egg yolks till well blended.
- In another bowl beat the egg whites till soft peaks form.
- Fold egg whites into the tomato mixture along with the cheeses, spinach, lemon zest and pepper.
- Pour into an oiled shallow 2 quart baking dish.
- Bake at 350 degrees 15 minutes or till set.
- Cool completely then cut into small squares and place on a platter.
- Garnish the platter with basil.
- Provide toothpicks!
