Zucchini Grinders

  2. Preheat the oven to 375 degrees F.

  4. Pour oil into a skillet over medium heat.
  5. Add onion, zucchini, and garlic and cook until veggies become slightly tender.
  6. Season with red pepper flakes.

  8. Lay out 4 squares of foil that are large enough to wrap up one of the sub rolls.
  9. Put a roll onto each square of foil.
  10. Spoon the zucchini mixture into each roll until full.
  11. Spread a layer of marinara sauce (or diced tomatoes) onto the zucchini mixture.
  12. Top with a handful of shredded mozzarella.
  13. Wrap the rolls in foil, making sure that theyre completely closed.
  14. Place wrapped rolls on a baking sheet.

  16. Bake for 15 minutes in the preheated oven, until bread is heated through, and cheese is melted.
