Sun-Dried Tomato and Basil Pasta Sauce
- 2 Tablespoons Extra Virgin Olive Oil
- 1 whole Yellow Onion, Diced
- 3 cloves Garlic, Minced
- 3 whole Sun-dried Tomatoes Packed In Oil, Drained And Chopped
- 1/2 cups Dry White Wine
- 1 can (about 15 Oz. Size) Fire-roasted Tomatoes
- 1 can (about 28 Oz. Size) Tomato Sauce
- 1 Tablespoon Dried Oregano, More To Taste
- 2 Tablespoons Fresh Basil, Chopped, More To Taste
- Salt And Pepper, to taste
- Heat oil in a medium saucepan over medium-high heat.
- Saute onions until they just start to turn golden brown, about 3-5 minutes.
- Add garlic and sun-dried tomatoes.
- Saute another 2 minutes, until garlic is lightly toasted.
- Be sure not to burn the garlic as it will turn bitter.
- Deglaze pan with wine.
- Simmer for 1-2 minutes, until wine reduces by half.
- Stir in tomatoes and tomato sauce.
- Reduce heat to medium-low.
- Stir in oregano and basil.
- Season with salt and pepper.
- Allow to simmer 10-15 minutes, to slightly reduce and thicken sauce.
