Sun-Dried Tomato and Basil Pasta Sauce

  1. Heat oil in a medium saucepan over medium-high heat.
  2. Saute onions until they just start to turn golden brown, about 3-5 minutes.
  3. Add garlic and sun-dried tomatoes.
  4. Saute another 2 minutes, until garlic is lightly toasted.
  5. Be sure not to burn the garlic as it will turn bitter.
  6. Deglaze pan with wine.
  7. Simmer for 1-2 minutes, until wine reduces by half.
  8. Stir in tomatoes and tomato sauce.
  9. Reduce heat to medium-low.
  10. Stir in oregano and basil.
  11. Season with salt and pepper.
  12. Allow to simmer 10-15 minutes, to slightly reduce and thicken sauce.
