Greek Salad With Spicy Croutons
- 1 head soft green lettuce
- 1 small onion
- 1 carrot
- 12 cherry tomatoes
- 12 cup feta cheese, crumbled
- 1 tablespoon all purpose Greek seasoning
- 1 tablespoon water
- 13 cup olive oil
- 14 cup red wine vinegar
- 1 teaspoon sugar (optional) or 1 teaspoon honey (optional)
- 1 loaf bread
- 2 tablespoons butter
- 13 cup olive oil
- 14 cup aleppo pepper
- 14 cup all purpose Greek seasoning
- Salad:.
- Prepare the dressing by mixing Greek seasoning with water.
- Let stand a few minutes, then whisk with oil, vinegar, and sugar, if desired.
- Thinly slice onion and carrot, and quarter the tomatoes.
- Toss with 1/4 cup dressing and half the feta cheese crumbles, set aside.
- Wash and dry the lettuce, rip into bite-sized pieces, divide between two plates.
- Place half the marinated veggies in the center of each plate, crumble the rest of the cheese over the salads, and top with as much remaining dressing as desires.
- Spicy Croutons:.
- Chop the bread into small cubes, about 1/2 inch.
- Mix the spices together in a large bowl.
- Melt the butter and oil together.
- All olive oil can be used, which is healthier, but adding a bit of butter does taste great.
- Place the bread cubes into a clean brown paper bag.
- Pour in the oil and butter and seasoning mixture.
- Roll the bag closed and shake to coat the bread cubes.
- Put on a baking sheet and place in a warm oven, 170 degrees, to dry and crisp the croutons.
- Bake about one hour-no need to stir.
- Store in air tight container.
