Marinated Grilled Chicken

  1. Trim skin and fat from chicken thighs.
  2. score chicken thighs lengthwise (to help marinate penetrate).
  3. Place dried herbs (first four ingredients) in small plastic sandwich bag & crush with rolling pin (or grind with mortar and pestle) Rub dry herbs into chicken pieces.
  4. Place chicken pieces into large zip-lock bag.
  5. Whisk remaining ingredients and pour over chicken in bag.
  6. Seal.
  7. Let set in refrigerator all day or overnight.
  8. Place chicken pieces in 9x13 pan, sprayed first with Pam.
  9. Bake in 325 degree oven for 30 minutes.
  10. Spray grill with Pam and pre-heat grill.
  11. Place chicken pieces on grill for 2-3 minutes, rotate 45 degrees and grill another 2 minutes, turning over and cook 2 minutes, rotate 45 degrees and cook 2-3 minutes.
  12. Serve immediately!
  13. and enjoy!
