Marinated Grilled Chicken
- 4 chicken thighs
- 1 tablespoon sage
- 1 teaspoon dried rosemary
- 1 teaspoon garlic powder
- 12 teaspoon sea salt
- 2 tablespoons white wine vinegar
- 5 tablespoons extra-virgin olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon fresh minced garlic
- Trim skin and fat from chicken thighs.
- score chicken thighs lengthwise (to help marinate penetrate).
- Place dried herbs (first four ingredients) in small plastic sandwich bag & crush with rolling pin (or grind with mortar and pestle) Rub dry herbs into chicken pieces.
- Place chicken pieces into large zip-lock bag.
- Whisk remaining ingredients and pour over chicken in bag.
- Seal.
- Let set in refrigerator all day or overnight.
- Place chicken pieces in 9x13 pan, sprayed first with Pam.
- Bake in 325 degree oven for 30 minutes.
- Spray grill with Pam and pre-heat grill.
- Place chicken pieces on grill for 2-3 minutes, rotate 45 degrees and grill another 2 minutes, turning over and cook 2 minutes, rotate 45 degrees and cook 2-3 minutes.
- Serve immediately!
