Tuna Melt with Carrot-Raisin Salad

  1. Prepare Tuna Melt: In small bowl, with fork, combine tuna, celery, and mayonnaise.
  2. In nonstick 12-inch skillet, melt margarine over medium-high heat.
  3. Meanwhile, spread tuna mixture evenly on 4 bread slices.
  4. Top each with one-fourth of Cheddar and a remaining slice of bread.
  5. Arrange sandwiches in skillet.
  6. Cover skillet; cook 5 minutes or until Cheddar melts and bread is toasted, turning sandwiches over once.
  7. Carrot-Raisin Salad: While sandwiches are cooking, in small bowl stir all salad ingredients until combined.
  8. Makes about 4 cups.
