Orange Slice Cake
- 1 c. oleo
- 2 c. sugar
- 4 eggs
- 1 tsp. soda
- 1/2 c. buttermilk
- 3 1/2 c. flour
- 1 lb. chopped dates
- 1 lb. orange slices, chopped
- 2 c. chopped nuts
- 1 (3 1/2 oz.) can flaked coconut
- 12 oz. jar maraschino cherries
- Cream oleo and sugar.
- Add eggs, one at a time, beating well after each addition.
- Dissolve soda in milk, add to creamed mixture.
- Place flour in large bowl.
- Add dates, nuts, cherries and orange slices.
- Stir to coat each piece.
- Add flour mixture and coconut to creamed mixture.
- Bake in two loaf pans (9 x 5 x 3-inch) or three smaller loaf pans or bake in tube pan at 250u0b0 for 2 1/2 hours.
- Let sit in pan overnight.
- Will keep 8 months as good as it was when cooked.
- This can be wrapped in Saran Wrap, about three layers, to keep moisture in; freeze.
