Roasted GarlicFor the True Garlic Lovers.
- 1 head garlic (unpeeled)
- 2 tablespoons olive oil
- 1 teaspoon chopped fresh rosemary
- 1/4 teaspoon salt
- 2 slices stone-ground whole-wheat bread
- Preheat the oven to 400 degrees.
- Slice off the top of the garlic bulb, exposing the cloves.
- Place in a small ovenproof dish.
- Pour 1 tablespoon of the oil on top.
- Roast for 20 minutes.
- Remove the dish from the oven and preheat the broiler.
- Separate the garlic cloves, put them back into the dish, add the remaining 1 tablespoon oil, and sprinkle with the rosemary and salt.
- Broil until crisp and well browned on top, about 5 minutes.
- Coat the bread with the roasting liquid or a little plain olive oil, toast lightly, and spread the roasted garlic on top.
