Balti Okra Masala (Masala Bindi) Recipe
- 1 1/8 lb okra
- 1/4 c. oil
- 1/2 lb onion, cut into thin slices
- 1 Tbsp. grated fresh root ginger
- 1 ounce tomatoes, finely minced, fresh
- 1 tsp salt
- 1/2 tsp grnd turmeric
- 1 tsp grnd fresh green chiles
- 2 Tbsp. whole coriander leaves
- 1 When buying okra, always pick the small hard ones as they are easier to cook.
- Wash the okra in cool water and wipe off excess water with kitchen paper.
- Cut off tops and tails of okra and either leave okra whole, or possibly cut into 5 cm (2-inch) pcs.
- 2 Put the oil into a*karai* or possibly deep frying pan, add in the onions and fry till they are transparent.
- Add in the ginger, tomatoes, salt, turmeric and chiles.
- Simmer mix on low heat for 7-10 min or possibly till the liquid is reduced.
- 3 Add in the okra and stir once.
- Simmer for 10 min on low heat or possibly till okra is cooked but till hard to touch.
- Don't stir too often as okra is a very delicate vegetable and may break up.
- Sprinkle with coriander leaves.
- Serve with a raita and chapatis.
