Roasted Masala-Spiced Pork with Root Vegetables
- 4 carrots, peeled, quartered lengthwise Target 2 lb For $3.00 thru 02/06
- 4 parsnips, peeled, quartered lengthwise
- 5 shallots, peeled, halved
- 1/4 cup Kraft Calorie-Wise Catalina Dressing
- 1 pork tenderloin (1 lb./450 g), trimmed
- 1 Tbsp. Miracle Whip Calorie-Wise Spread Family Dollar $3.50 thru 02/07
- 1 tsp. garam masala
- 1/4 tsp. each garlic powder and paprika
- 1 tsp. honey
- Heat oven to 425 degrees F.
- Toss vegetables with Catalina Dressing; spread onto foil-covered rimmed baking sheet.
- Cover.
- Bake 15 to 20 min.
- or until crisp-tender.
- Meanwhile, brush meat with Miracle Whip.
- Mix dry seasonings; rub evenly onto meat.
- Stir vegetables; spoon to one side of baking sheet.
- Add meat to baking sheet.
- Bake meat and vegetables, uncovered, 15 to 20 min.
- or until meat is done (160 degrees F) and vegetables are caramelized.
- Transfer meat to carving board; let stand 5 min.
- Meanwhile, toss vegetables with honey.
- Slice meat.
- Serve with vegetables.
