Escarole and White Beans

  1. Heat oil over medium heat.
  2. Add garlic and saute for 2 minutes until golden brown.
  3. Stir in the beans and their liquid.
  4. Add the broth, escarole, salt and pepper.
  5. Lower the heat and cook for about 10 minutes or until hot.
  6. Top with grated cheese.
