Pecan Jalapeno Brittle

  1. Melt butter in an iron skillet.
  2. Toss in peppers and cook just until soft.
  3. Meanwhile, in a microwavable bowl, combine nuts, sugar, syrup and salt; cook on high 4 minutes.
  4. Remove carefully and stir; add peppers and microwave on high for 4 more minutes.
  5. Remove bowl from microwave and stir again; add almond flavoring and cook for an additional 2 minutes.
  6. Add soda and pour immediately into a greased cookie sheet.
  7. Spread out into a thin layer.
  8. Let the mixture cool and then twist pan to break into pieces.
  9. Enjoy!
