Pecan Jalapeno Brittle
- 1 Tablespoon Butter
- 1/2 cups Chopped Jalapenos
- 1- 1/2 cup Shelled Pecans
- 1 cup Sugar
- 1/2 cups Corn Syrup
- 18 teaspoons Salt
- 1 teaspoon Almond Flavoring
- 1 teaspoon Baking Soda
- Melt butter in an iron skillet.
- Toss in peppers and cook just until soft.
- Meanwhile, in a microwavable bowl, combine nuts, sugar, syrup and salt; cook on high 4 minutes.
- Remove carefully and stir; add peppers and microwave on high for 4 more minutes.
- Remove bowl from microwave and stir again; add almond flavoring and cook for an additional 2 minutes.
- Add soda and pour immediately into a greased cookie sheet.
- Spread out into a thin layer.
- Let the mixture cool and then twist pan to break into pieces.
- Enjoy!
