Italian-Style Meat Loaf
- 2 eggs
- 1 (14 ounce) jar pasta sauce
- 1 cup Italian seasoned breadcrumbs
- 1 cup onion, chopped
- 2 teaspoons italian seasoning
- 12 teaspoon salt
- 2 lbs lean ground beef
- 1 (7 1/4 ounce) box Betty Crocker roasted garlic mashed potatoes
- 2 12 cups milk
- 1 12 cups hot water
- 14 cup butter
- 12 cup parmesan cheese, grated
- Heat oven to 375.
- Spray 13/9 inch glass baking dish with cooking spray.
- In large bowl, beat eggs.
- Stir in pasta sauce, bread crumbs, onion, Italian seasoning, salt and beef until well blended.
- Press mixtue in bottom of baking dish.
- Bake 45 to 55 minutes or until meat thermometer inserted in center of loaf reads 160 degrees F.
- Meanwhile, make mashed potatoes as directed on box, using milk, hot water and butter.
- Spoon any excess juices from baking dish.
- Spread mashed potatoes over meat loaf; sprinkle with cheese.
- Bake 10 to 15 minutes longer or until top begins to brown.
- Let stand 5 minutes before cutting.
