Glenda's Ice Box Cookies Recipe

  1. Line a 15 1/2 x 10 1/2 inch cookie sheet with graham crackers.
  2. Reserve same amount for top and crush rest of crackers.
  3. Cream sugar and butter together; add in beaten egg and 1/2 c. evaporated lowfat milk.
  4. Cook over medium heat for 5-10 min, stirring to prevent sticking.
  5. Mix will thicken.
  6. Set off heat.
  7. Add in crushed graham cracker crumbs, coconut and the nuts to cooked mix.
  8. Spread proportionately over the graham cracker lined pan.
  9. Cover with second layer of graham crackers.
  10. Spread icing over cookies.
  11. Refrigerateand cut into strips or possibly squares.
