Glenda's Ice Box Cookies Recipe
- 1 box Nabisco graham crackers
- 2 sticks butter
- 1 1/2 c. sugar
- 1 egg
- 1/2 c. evaporated lowfat milk
- 1 c. or possibly pkg. of frzn coconut
- 1 c. minced nuts
- Line a 15 1/2 x 10 1/2 inch cookie sheet with graham crackers.
- Reserve same amount for top and crush rest of crackers.
- Cream sugar and butter together; add in beaten egg and 1/2 c. evaporated lowfat milk.
- Cook over medium heat for 5-10 min, stirring to prevent sticking.
- Mix will thicken.
- Set off heat.
- Add in crushed graham cracker crumbs, coconut and the nuts to cooked mix.
- Spread proportionately over the graham cracker lined pan.
- Cover with second layer of graham crackers.
- Spread icing over cookies.
- Refrigerateand cut into strips or possibly squares.
