Cornish Hens with Wild Rice for Smoker

  1. Rinse hens, pat dry and season cavity with salt.
  2. Saute onions in 1 tablespoon butter, stir in rice and chopped nuts.
  3. Stuff hens with rice mixture and secure opening.
  4. Prepare glaze by melting 2 tablespoon butter in a saucepan.
  5. Add marmalade and orange juice, blend until smooth.
  6. Brush hens with glaze and place on smoker grid.
  7. Brush with glaze before serving.
  8. CHARCOAL: Use 5 lbs.
  9. charcoal, 3 quarts hot water, 2 wood sticks and smoke 2 to 2 1/2 hours ELECTRIC: Use 3 quarts hot water, 2 wood sticks, and smoke 2 to 2 1/2 hours.
  10. GAS: Use 3 quarts hot water, 2 wood sticks, and smoke 2 to 3 hours.
