Breakfast Sausage Quesadillas
- 12 ounces pork sausage
- 1 tablespoon butter
- 10 large eggs, beaten
- 1 12 cups shredded monterey jack pepper cheese
- 14 teaspoon salt
- 18 teaspoon black pepper
- 48 inches flour tortillas, warmed
- In large skillet, brown sausage.
- Drain fat.
- Set aside.
- Melt butter.
- Add egg and cook 3 minutes.
- Stir in sausage, cheese, salt and pepper.
- Cook until cheese is melted.
- Place tortillas on work surface.
- Spoon mixture over each tortilla.
- Fold in half, pressing gently to seal.
- Coat a skillet with cooking spray.
- Add tortillas and brown.
