Sweet Potato Cottage Pie
- 2 teaspoons olive oil
- 1 lb extra lean ground beef
- 1 cup onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 14 teaspoon ground pepper
- 4 teaspoons all-purpose flour
- 1 12 cups beef broth
- 1 teaspoon Worcestershire sauce
- 1 cup frozen mixed vegetables, thawed
- 3 cups mashed sweet potatoes, hot
- In large nonstick skillet, heat oil over medium-high heat.
- Brown beef and onion, stirring often.
- Stir in garlic, thyme and pepper; cook for 1 minute.
- Stir in flour.
- Add broth and Worcestershire.
- Bring to boil, stirring, until thickened.
- Stir in mixed vegetables.
- Serve with sweet potatoes.
