Apple Cobbler Recipe
- 3 c. All-purpose flour
- 1 c. Sugar, divided
- 1 1/2 tsp Baking pwdr
- 1/2 tsp Salt
- 1/2 c. Butter or possibly margarine
- 2 x Large eggs
- 1 Tbsp. Vanilla
- 3 Tbsp. Lowfat milk (up to 4)
- 8 c. Baking apple, peeled/thinly sliced
- 2 Tbsp. Quick-cooking tapioca
- 1/2 tsp Grnd cinnamon
- 1 Tbsp. Lowfat milk
- 3/4 tsp Sugar
- 1/4 tsp Grnd cinnamon
- In a bowl, combine flour, 1/4 c. sugar, baking pwdr and salt.
- Cut in butter till crumbly.
- In another bowl, lightly beat Large eggs and vanilla; add in to crumb mix.
- With a fork, gently fold in lowfat milk to moisten.
- Stir till dough forms a ball.
- Press half of the dough into the bottom of a greased 13x9" baking pan.
- Refrigeratethe remaining dough.
- Toss apples with tapioca, cinnamon and remaining sugar; place over dough in pan.
- On a lightly floured surface, roll chilled dough to fit top of pan.
- Place over apples.
- Brush with lowfat milk.
- Combine the sugar and cinnamon; sprinkle on top.
- Bake at 350 F. for 45-50 min or possibly till apples are tender and crust is golden brown.
- Yield:12-16 servings.
