Eggplant Rollatini

  1. Heat oven to 350 degrees F.
  2. Cut thin slice off opposite long sides of each eggplant; discard.
  3. Cut each eggplant into 6 lengthwise slices; place in microwaveable bowl.
  4. Microwave on HIGH 5 to 6 min.
  5. or until eggplant is very tender; place in colander.
  6. Drain well.
  7. Place in single layer on clean kitchen towel; cover with second towel.
  8. Press gently to remove excess moisture from eggplant.
  9. Mix cottage cheese, 1-1/2 cups mozzarella, bread crumbs, Parmesan and basil; spoon about 1/3 cup onto each eggplant slice.
  10. Roll up, starting at one short end.
  11. Place, seam-sides down, in 13x9-inch pan sprayed with cooking spray; cover with pasta sauce and remaining mozzarella.
  12. Bake 30 to 35 min.
  13. or until hot and bubbly.
  14. Let stand 5 min.
  15. before serving.
