Rainbow Pasta

  1. COMBINE the butter, oil, MY FIRST VEGEMITE and tomato paste in a saucepan over medium low heat and stir until butter has melted.
  2. COOK the pasta in a large saucepan of boiling water.
  3. One minute before draining, add the vegetables to the saucepan.
  4. Drain the pasta and vegetables, reserving 1/2 cup of cooking water.
  5. STIR the butter sauce through the pasta, adding some reserved cooking water to loosen if necessary.
  6. Spoon into serving bowls and top with cheese.
  7. Serve immediately.
