Three Alarm Chili
- 1 can tomato puree (passata)
- 1 can tomatoes, canned, crushed
- 6 pounds ground beef, extra lean ground
- 2 cups onions minced
- 1 cup red pepper flakes
- 1/4 cup oregano dried
- 1 can kidney beans, canned drained
- 2 teaspoons kosher salt to taste
- 2 tablespoons black pepper to taste
- 2 cups cheddar cheese grated
- 8 ounces sour cream
- 4 cups sweet vidalia onions minced
- Combine beef and onions in a stockpot.
- Over a moderate flame heat and stir for 15 to 20 minutes, until browned.
- Stir in remaining ingredients.
- Bring to a boil, reduce heat, and simmer for 2 hours.
- Serve hot, garnished with grated cheddar cheese, sour cream, and minced sweet onions.
