Spicy veggie & quinoa salad
- 1 cup quinoa
- 1 medium red bell pepper, diced
- 1 can black beans, drained
- 1 can diced tomatoes with jalapenos
- 1/2 can sweet white corn, drained
- 1 tsp cilantro, dried
- 2 clove garlic, minced
- 1 packages McCormick hot taco seasoning mix
- 1/3 cup sour cream
- 1/4 cup grated cheese
- Rinse and cook quinoa as directed on packacge.
- In large skillet, combine all other ingredients (excluding cheese and sour cream for topping).
- Bring to a boil.
- Then reduce heat and cover, stir occasionally.
- When quinoa is done, fluff with fork, place a serving size on plate and smother with vegetables.
- Top with grated cheese and sour cream, enjoy alone or with tortilla chips!
