Spicy veggie & quinoa salad

  1. Rinse and cook quinoa as directed on packacge.
  2. In large skillet, combine all other ingredients (excluding cheese and sour cream for topping).
  3. Bring to a boil.
  4. Then reduce heat and cover, stir occasionally.
  5. When quinoa is done, fluff with fork, place a serving size on plate and smother with vegetables.
  6. Top with grated cheese and sour cream, enjoy alone or with tortilla chips!
