Smoked Mackerel Pate in Lemon Cups
- 350 g smoked mackerel fillets, skinned
- 150 g butter, softened
- 150 ml sour cream
- 2 -3 tablespoons lemon juice
- salt and pepper
- 1 pinch cayenne pepper
- 6 lemons
- 6 small bay leaves
- toast, triangles
- Put the mackerel, butter, soured cream and lemon juice into a blender or food processor and blend until smooth.
- Add the seasoning to taste.
- Cut the tops from 6 lemons and carefully remove the flesh.
- Spoon the pate into the lemon shells.
- Top with the bay leaves.
- Chill.
