Jalapeno Sauce
- 12 each jalapeno
- 1/2 each red onion
- 6 each garlic cloves
- 2 cup water
- 1 cup vinegar
- 1 tsp salt
- Prep the vegetables.
- Slice the onion.
- Mince the garlic.
- Slice the jalapeno, remove the seeds.
- Place into hot (medium heat) oiled pan.
- Stir until the vegetables soften.
- Add the water.
- Let cook until water is almost gone (about 20 minutes)
- Let the vegetables cool to room temperature.
- Place mixture into a blender.
- Add vinegar.
- Blend.
- Pour over a fine sieve.
- Let the sauce age for a week before using.
