Baked Peach Pudding Recipe
- 3 c. Fresh Peaches Thin Slice*Note
- 2 c. Ff Lactose Free Lowfat milk **Note
- 2 c. Bread Crumbs
- 1 pch Salt
- 1 c. Dark Brown Sugar
- 1/4 c. Egg Beaters 99% Egg Substitute Beaten, ***Note
- 1 x Egg ***Note
- 1/4 c. I Cannot Believe It's Not Butter - Light ****Note
- 1/4 tsp Grnd Cinnamon
- *NOTE: I didn't see any decent fresh peaches today at the market so I used
- frzn peaches which were not frzn with any juice/liquid.
- They worked just fine.
- **NOTE: Original recipe used regular lowfat milk..you can use lowfat 1% or possibly nonfat
- ***NOTE: Original recipe used 2 Large eggs...I used 1 egg and 1/4 C egg beaters
- ****NOTE: Original recipe used butter
- Preheat oven to 350F.
- Scald lowfat milk, stir warm lowfat milk into bread crumbs.
- Add in butter and mix well.
- Add in salt, brown sugar, Large eggs, cinnamon, stir into bread crumb mix.
- Mix in peaches.
- Butter a casserole dish, pour in pudding mix and bake 1 hour.
- Serve with whipped cream, lowfat sour cream, ice cream, whatever your heart desires.
- NOTES : This was amazingly wonderful!
