Banana Bread Baked Oatmeal
- 6 bananas (I used ones that had gone very ripe then froze and defrosted them)
- 1 cup applesauce
- 4 eggs
- 2/3 cup natural fat free yogurt
- 1 tbsp vanilla extract
- 3 cup oats (old fashioned, whizzed until fine in a food processor)
- 1 tsp salt
- 2 tsp baking soda
- 1 tsp baking powder
- 1 cup stevia granules (sweetener)
- Spray two medium loaf tins (this recipe makes two banana breads, but you can slice one of them when cold and wrap the pieces in plastic wrap then freeze for another time)
- Mash the bananas in a large bowl, then mix in the other wet ingredients
- Add the dry ingredients and mix well
- Pour into two loaf tins and bake in centre of oven at 374F/ 180 C for 55 minutes - an hour
- Let them cool for 15 minutes in the time before attempting to remove them, then cool on a wire rack
