Porkupine Balls
- 1 lb ground turkey
- 14 cup rice
- 12 cup Italian seasoned breadcrumbs (or more)
- 1 egg
- 1 tablespoon soy sauce (optional)
- 3 tablespoons barbecue sauce or 3 tablespoons ketchup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- salt and pepper, to taste
- 2 (10 2/3 ounce) cans campbell's tomato soup
- 1.5 (10 2/3 ounce) cans water
- 1 teaspoon italian seasoning
- salt and pepper, to taste
- In a large sauce pan, pour in tomato soup, seasonings and 1 1/2 cans water, and heat to a boil.
- In a mixing bowl, combine the meat, rice, egg, soy sauce, barbeque, garlic and onion powders and salt and pepper.
- Mix together.
- Gradually add the bread crumbs, adding more if needed, until the mixture becomes firm enought to roll.
- Roll out into golf ball size balls onto a cookie sheet.
- Once soup has come to a boil, add in the meatballs, cooking on medium heat for about 20 minutes, or until meat is cooked.
- If sauce becomes too thick, add more water.
- Turn heat to low and simmer for another 10 or until rice is completely cooked and sauce is thickened.
