Quick Red Rub
- 2 tablespoons medium-hot unblended red chile powder (preferably from Chimayo)
- 2 teaspoons freshly ground cumin (preferably from toasted seeds)
- 1 teaspoon freshly ground black pepper
- 1 teaspoon granulated brown sugar
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- In a small bowl, combine the powdered chile, cumin, pepper, sugar, garlic powder, and salt; mix well.
- Use immediately or transfer to an airtight container and store at room temperature.
