Coconut Mousse
- 1 can coconut milk (400 ml)
- 1 can condensed milk (300 ml)
- 1 tsp vanilla extract
- 1/2 cup hot water
- 1 1/2 tbsp unflavoured gelatine
- Pour the coconut milk, condensed milk and vanilla extract into a large bowl.
- Combine together well until smooth.
- Dissolve completely the gelatin in the hot water.
- Gradually pour the water into the cream mixture and mix well.
- Pour the mixture either into individual small cups or into a shallow container.
- Transfer to the fridge and chill intil the mousse has set.
- Decorate with your chosen topping.
- I simply added sprinkled powdered sugar on the mousse.
