Chicken Salad Wraps (Atkins)
- 1 lb poached chicken breast
- 1 celery rib, chopped
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon chopped fresh parsley
- 3 large lettuce leaves
- 12 teaspoon finely chopped chipotle chile in adobo (optional,For a spicier version)
- Cut chicken into 1/2 cubes.
- Mix celery, mayonnaise, mustard, and parsley in a bowl.
- Add chicken; toss to coat.
- Wrap in large lettuce leaves.
