Chicken and Cranberry Pizza
- 1/2 cups Water
- 1/2 cups Sugar
- 2 cups Fresh Whole Cranberries
- 1 whole Thin Pizza Crust Of Choice (10 Ounce Size, Like Boboli)
- 13 cups Cranberry Jelly (after Its Made)
- 2 cups Diced Grilled Chicken (I Used Store Bought, Frozen)
- 1/4 teaspoons Salt
- 1/4 teaspoons Pepper
- 1/2 teaspoons Garlic Powder
- 23 cups Mozzarella Shredded Cheese
- 2 cups Baby Arugula Leaves
- 1 cup Pecan Pieces
- 1- 1/2 cup Parmesan Shavings
- Lets make the sauce first.
- In a medium sized saucepan, add the water and sugar and bring to a slight boil so the sugar dissolves.
- Once the sugar has dissolved, add the cranberries, lower the heat just a bit and allow it to simmer for 10-15 minutes until mixture thickens and the cranberries have popped open.
- It should look like jelly.
- Remove from heat.
- Set aside and let it cool a bit, then place in the refrigerator until ready for use.
- Preheat oven to 500 F. Spray a baking sheet with non-stick cooking spray and place the crust on top.
- Take 1/3 cup of the cranberry jelly and spread a thin layer on top of the crust.
- Place the frozen grilled chicken pieces on top of the pizza, then sprinkle the salt, pepper and garlic powder evenly across the pizza for flavor.
- Now add the mozzarella cheese and place pan in the oven for 10-12 minutes until crust becomes crusty and slightly brown at the edges.
- Once the pizza is finished, remove it from the oven.
- Sprinkle the arugula leave on top as well as the pecans and the Parmesan shavings.
- Cut into squares and serve!
