Veggie Roast
- 6 Chestnut Mushrooms Sliced
- 1 medium Onion sliced
- 2 Potatoes sliced thin
- 2 Florets of broccoli
- 2 tbsp Virgin olive oil
- 3 sliced Tomatoes
- 1/4 tsp Salt
- 1/2 tsp Black cracked Pepper
- 100 grams Mozzerella Cheese
- In a small greased Roasting dish break up the broccoli and spread it all in the bottom
- Place the thin sliced potatoe on top of the broccoli covering it
- Spread the sliced onion on top and covering the potatoe
- Spread the mushrooms accross the top of the onion
- Spread the sliced tomatoes on top of the mushrooms
- Sprinkle all over with the salt and pepper
- And then pour over the layers with the Virgin oil
- Cover in foil and cook on gas 7 or 180 for 30 mins take out , take off the foil and sprinkle the mozzerella cheese all over the top put back in oven or grill to melt the cheese.
