Chocolate Chip Banana Muffins
- 3/4 cup firmly packed brown sugar
- 1/2 cup Land O Lakes Butter, softened
- 3 medium (1 1/2 cups) ripe bananas, mashed
- 2 Land O Lakes Eggs
- 1 teaspoon vanilla
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup mini semi-sweet real chocolate chips
- Heat oven to 350F.
- Combine brown sugar and butter in bowl.
- Beat at medium speed, scraping bowl often, until mixture is creamy.
- Add bananas, eggs and vanilla; continue beating until well mixed.
- Combine flour, whole wheat flour, baking soda and salt in another bowl.
- Stir flour mixture into banana mixture just until moistened.
- Gently stir in chocolate chips.
- Spoon batter into paper-lined or greased muffin pans.
- Bake 18-25 minutes or until light golden brown.
- Let stand 5 minutes; remove from pans.
