Corn w/ Coconut & Diced Green Chiles
- 1 lb frozen corn
- 1 can coconut milk
- 4 small cans diced green chiles
- 1 tsp cayenne pepper
- 2 tsp ground coriander seed
- 3/4 tsp paprika
- 1 pinch sugar
- 1 pinch salt
- Marinate corn in coconut milk for 4 hours.
- Add to saute pan with green chiles.
- Season.
- Reduce until thickened.
- Variations; Cilantro, grilled pineapple, roasted bell peppers or garlic, shallots, onions, butter
