Momma's blueberry pancakes and homemade triple berry syrup
- 1 cup organic 7 grain pancake mix
- 1 egg
- 2 tbsp coconut oil (melted)
- 1 cup milk
- 2 tbsp chia seeds
- 1/2 cup dried blueberries
- 2 cup mixed berries (i use frozen blueberries, strawberries, and blackberries
- 1/4 cup water
- 1/4 cup sugar
- Put all of the syrup ingredients into a sauce pan and boil on medium high heat
- Mix all pancake ingredients in a bowl and let sit for 10 minutes (the chia seeds will soak up the extra milk)
- Cook pancakes on an ungreased, medium heat pan, flip them when bubbles start popping on the top
- Cook your syrup until it thickens on its own, crushing the berries as you go.
- For a smoother syrup use an immersion blender
- Serve and enjoy ( I prefer to use all organic ingredients.
- The chia seeds add protein and omega fatty acids)
