Beet Chutney With Walnuts Recipe
- 4 med beet, roasted, peeled, and, diced
- 1/2 c. red onion, finely, diced
- 1 pch cayenne pepper
- 1/4 tsp lemon, zest
- 1 1/2 tsp lemon, juice
- 1 Tbsp. walnuts, minced salt freshly cracked black pepper
- Preheat oven to 400 degrees FTo roast the beets, place them in a pan with a little water, cover with tinfoil and bake for 45 to 60 min till tender.
- Cold, then peel and dice beets.
- Place in a bowl.
- In a skillet, saute/fry onions in extra virgin olive oil for 1 to 2 min.
- Add in to beets along with the rest of the ingredients.
- Mix and adjust seasoning.
