30 Day Bran Muffins Recipe
- 2 c. 40% bran flakes
- 4 c. all-bran
- 2 c. boiling water
- 1 quart buttermilk
- 1 c. minced dates, nuts raisins, etc.
- 1 c. shortening
- 2 c. sugar
- 6 x Large eggs
- 5 c. flour
- 5 tsp soda
- 1 Tbsp. salt
- Mix bran flakes, bran and water and let stand a few min.
- Add in buttermilk, nuts and shortening and sugar cream.
- Add in Large eggs one at a time, beating after each egg.
- Sift together dry ingredients (flour, soda and salt) and add in to bran.
- Mix just barely sufficient to blend.
- Store in refrigerator up to 30 days.
- Bake at 400 degrees for 15 to 20 min.
