Cake

  1. Preheat oven to 180 degrees Celsius.
  2. Beat eggs, mix in oil, nutmeg, cinnamon, vanilla, brown sugar and baking soda.
  3. Add flour and mix - batter should be thick and smooth.
  4. Add walnuts and then grated carrots.
  5. Carrots will bring the mixture back to a consistency you can pour into a greased 10 inch round pan.
  6. Cook 45 minutes or until inserted skewer comes out clean.
  7. Ice with cream cheese icing.
