Dtom Yam Hoi Nahm Sai

  1. Scrub the clams.
  2. Bring the stock to a boil, add salt and sugar to taste, then add the clams and simmer until just opened.
  3. Discard any clams that remain closed.
  4. Season with lime juice and bruised chillies.
  5. Serve scattered with coriander.
