Black Eyed Pea and Ham Salad
- 1 tablespoon honey
- 14 cup cider vinegar
- 2 teaspoons minced garlic
- 1 teaspoon hot sauce
- 12 cup olive oil
- 3 cups canned black-eyed peas, drained and rinsed
- 1 medium bell pepper, diced
- 12 cup red onion, diced
- 1 stalk celery, diced
- 1 cup cooked ham, chopped
- In large bowl, combine all ingredients except ham.
- Cover and chill for 8 hours.
- In small skillet, saute ham for 4-5 minutes.
- Stir into chilled pea mixture just before serving.
