Goat Cheese Tzatziki
- 1 whole Cucumber
- 1 clove Garlic
- 1 cup Fresh Mint
- 16 ounces, weight Greek Yogurt
- 7 ounces, weight Fresh Goat Cheese
- Salt And Pepper

- Peel every other length of the cucumbers skin.
- Cut into quarters lengthwise, then seed.
- Finely dice, place in a colander, add salt, stir and let drain for 15 minutes.

- Finely chop the garlic.
- Roughly chop the mint.
- Mix the yogurt and goat cheese until smooth.
- Add all the other ingredients.
- Season with salt and pepper, stir, and serve immediately or keep refrigerated.
