EASY PEASY FIG + PISTACHIO WAFERS

  1. Oven 180c.
  2. In a food processor, add the filling ingredients and blitz until a paste forms.
  3. On a sheet of puff pastry add 1/2 of the mixture and spread out evenly.
  4. Roll up pastry into a log.
  5. Cut into 1-2cm thickness.
  6. With a rolling pin, roll out into a round biscuit shape.
  7. Place onto a lined cookie tray put baking paper on top then place another cookie tray on top to stop them from puffing up to much and bake until crispy and browned.
  8. Roughly 15 minutes.
  9. Remove from oven.
  10. Place on cooling tray.
  11. Drizzle over maple syrup and sprinkle with caster sugar.
  12. And serve.
