Pfeffernuesse ( Christmas Pepper Nuts)
- 2 cups honey
- 2 teaspoons baking soda
- 1 cup brown sugar, packed
- 14 cup butter
- 14 cup lard
- 12 teaspoon black pepper
- 2 eggs, well beaten
- 1 teaspoon cardamom
- 1 teaspoon ground cloves
- 6 cups flour
- Cream honey, baking soda, brown sugar, butter and shortening.
- Blend in pepper, eggs, spices, and flour to form a stiff dough.
- Cover tightly and ripen in refrigerator 3 days.
- Roll out into cylinders about 1" in diameter.
- Cut into 1/2" pieces with a sharp knife.
- Bake on greased cookie sheet for 5-7 minutes at 350*.
- Roll in powdered sugar while warm.
- Note: You can also coat with a frosting made from 1 large egg white, 2 t. light corn syrup, 1/4 t. ground cardamom, and 1 1/2 cups sifted powdered sugar.
